Focaccia art is the famous food trend that recently made its colorful debut. From elaborate floral scenes to simple gardens, this concept is quite possibly the best thing since slice bread. Plus, some say that decorating these loaves can be pretty darn therapeutic!
This gluten-free recipe yields a fluffy textured bread topped with layers of heirloom tomatoes, olives and fresh herbs. Follow along to create a culinary masterpiece with the toppings of your choice. We suggest using ombre tomatoes and rainbow veggies. If you’re feeling extra creative, craft some flower designs with peppers slices and herbs.

Easy Gluten-Free Focaccia Bread Garden
Ingredients
Bread
- 2 eggs
- 2 Tbsp. water
- 4 Tbsp. olive oil
- 1 box Simple Mills Almond Flour Artisan Bread Baking Mix
- 2 Tbsp. apple cider vinegar
Toppings
- 1 pint sliced cherry tomatoes
- 2 Tbsp. sliced olives
- Fresh herbs of choice (parsley, rosemary, etc.)
- Pink salt (optional)
- Sesame seeds (optional)
Instructions

Heat oven 350 F. In large bowl, whisk eggs, water and oil. Add bread mix and stir to combine. Stir in vinegar. Set aside for 4 minutes to thicken.

Divide dough into two equal portions. Transfer to parchment-paper-lined baking sheet. Moisten fingers (to prevent sticking) and shape dough into two 7-in. ovals or circles.

On top of each circle, arrange sliced tomatoes, olives and herbs in a pattern you like. Sprinkle with fresh herbs, and salt and/or sesame seeds if desired. Bake 20 minutes.
