Ingredients
- 1 cup 120 g gluten-free oat flour
- 1/2 tsp. Celtic salt
- 1/4 cup water plus 2-3 Tbsp. if needed
Instructions

Preheat oven to 500 degrees F. Line a large sheet pan with parchment paper, and cut another piece the same size. Have rolling pin ready.

In mixing bowl, combine flour and salt.

Set timer to 18 minutes, then pour 1/4 cup water into flour mixture and stir, adding more water only if needed to make dough workable. (Note: Place dough in oven within 18 minutes of mixing to follow traditional method.)

Place dough on parchment paper, cover with second piece of parchment and roll to 1/8-inch thickness.

Remove second parchment paper and use fork to poke dough all over.

Score into 12 pieces, then bake 10-13 minutes or until matzo is crisp and slightly browned on edges.
