Gluten-Free Meatloaf Patties

Meatloaf always conjures up comforting memories of childhood. You remember playing barefoot in the front lawn when mom would call from the house, telling you the meatloaf was ready for dinner. The soothing, belly-warming dish brings to mind those happy, simple days, densely packed and lightly sweetened. This recipe for meatloaf burgers is a modern and quick-cooking version of the old favorite. The best part? The crispy outer crust that’s created when you cook each patty on a skillet.

Serves 6

Ingredients

1 lb. ground beef or turkey
1/2 cup quick oats
1/4 cup ketchup
1/4 tsp. each pink salt and black pepper
1/4 tsp. each garlic powder and oregano
Cooking spray

Directions

  1. In large bowl, combine meat, oats, ketchup and spices. Form mixture into 6 patties using about 1/2 cup for each.
  2. Heat skillet to medium and coat with cooking spray.
  3. Cook patties 5 minutes on each side until cooked through.
  4. Serve with Baked Sweet Potato Chips or Creamy Cauliflower Mash.
