- 1 Tbsp. water
- 2 tsp. avocado oil or melted coconut oil plus more for cooking
- 1 egg
- Zest of 1/2 an orange
- 1/2 cup Simple Mills Pancake & Waffle Mix
- Orange slices
- Blood orange slices
- Grapefruit pieces
- Honey
- Coconut yogurt
- Chia Seeds
Instructions

In large mixing bowl, whisk together egg, water, oil and orange zest. Add mix and whisk until well blended.

On lightly oiled griddle or skillet over medium heat, pour batter using 1-1/2 Tbsp. batter for each pancake. Cook until edges are slightly browned, flip and brown other side. Repeat until all batter is used.

Transfer pancakes to plate and add toppings as desired.
