Directions

Things You'll Need: (Makes as many as you want)

PANCAKES (4") Mix + Eggs + Milk or Water + Oil (Coconut or Vegetable)

4 1/2 cup 1 1 Tbsp 2 tsp
12 1½ cups 3 3 Tbsp 2 Tbsp
20 Full Box 5 1/3 cup 3 Tbsp

WAFFLES (4")

4 1/2 cup 1 2 Tbsp 2 tsp
12 1½ cups 3 5 Tbsp 2 Tbsp
20 Full Box 5 2/3 cup 3 Tbsp

Pancakes:

Whisk eggs, milk and oil in a large bowl. Add mix and whisk until well blended

Heat lightly oiled griddle or skillet on medium heat. Pour batter onto griddle, using 2 Tbsp batter for each pancake

Cook until edge are dry, turn and brown other side

 

Waffles:

Preheat waffle iron on high heat setting

Whisk eggs, milk and oil in a large bowl. Add mix and whisk until well blended

Pour batter onto preheated waffle iron

Cook on high according to waffle iron instructions and serve

Gluten-Free Citrus Pancakes

  • 1 Tbsp. water
  • 2 tsp. avocado oil or melted coconut oil (plus more for cooking)
  • 1 egg
  • Zest of 1/2 an orange
  • 1/2 cup Simple Mills Pancake & Waffle Mix
  • Orange slices
  • Blood orange slices
  • Grapefruit pieces
  • Honey
  • Coconut yogurt
  • Chia Seeds
  1. In large mixing bowl, whisk together egg, water, oil and orange zest. Add mix and whisk until well blended.
  2. On lightly oiled griddle or skillet over medium heat, pour batter using 1-1/2 Tbsp. batter for each pancake. Cook until edges are slightly browned, flip and brown other side. Repeat until all batter is used.
  3. Transfer pancakes to plate and add toppings as desired.
