Gluten-Free Sausage-Cheddar Balls

The roasting turkey smells delicious, and you caught a glimpse of the dessert table when you walked through the door. But the best part of a big holiday dinner is the appetizers, lined up neatly to greet your rumbling tummy and bite-sized so you can try them all without filling up before the main course. If you’re bringing a platter to share, roll out these meatballs to get the party started! Assembled from just four ingredients – all of which are gluten free – and baked, not fried, they’re easy enough for anyone to make and will be enjoyed by all.

Gluten-Free Sausage-Cheddar Balls

Makes 20 balls

Ingredients

1-1/2 cups almond flour
1 lb. organic, free-range spicy Italian ground sausage
1/2 to 3/4 cup shredded 3-year aged cheddar cheese
1 egg
Olive oil cooking spray

Directions

  1. Preheat oven to 350° F.
  2. In large bowl, whisk egg, then add the rest of ingredients by hand until all ingredients are perfectly blended and wet/ dry ingredients stick together.
  3. Break apart mixture into 20 small balls.
  4. Spray baking sheet thoroughly with olive oil spray. Arrange balls on sheet.
  5. Bake balls for 25 minutes or until sausage is cooked all the way through.
