Pizza doesn’t have to be off limits just because you’ve gone gluten free. Make your own crisp, chewy crust with good-for-you ingredients such as teff (the world’s smallest gluten-free grain!), hemp seeds and a homemade flax “egg.” Top with your favorite fresh veggies, herbs and vegan cheese for a specialty pie with pizazz!
Gluten-Free Veggie Pizza
*To make a flax “egg,” combine 3 Tbsp. flaxseed meal and 1/2 cup + 1 Tbsp. water; let sit for three minutes.
Sliced veggies of choice (I like mushrooms and artichooke hearts)
Fresh basil leaves, whole or shredded
Crushed red pepper
1. In large bowl, mix together crust ingredients; shape into ball and cover. Refrigerate dough for 2 to 4 hours.
2. Remove dough from refrigerator. Punch down and knead well, then roll out onto a lightly oiled baking sheet.
3. Pre-heat oven 350 degrees F. Layer on topping ingredients as desired. Bake for 20 to 25 minutes.
