Maybe you’re not fond of change. Maybe your happiness is sunshine, warm weather and barbecues by the pool, and the transition to the new season throws you temporarily out of whack. Fret not, Summer Lover. This salad recipe, inspired by fall’s early flavors, is just what you need to welcome the cooler temperatures with open arms. Plus, it’s tossed in a creamy hemp seed dressing, which packs in even more wholesome goodness. You’ll become a fall fan yet.
Goldenberry Salad with Vegan Hemp Dressing
1 cup hemp seeds
½ cup sun-dried tomatoes
2 Tbsp. nutritional yeast
1 Tbsp. chia seeds
1 tsp. garlic powder
1 cup spinach
1-½ cups water
1 Tbsp. freshly squeezed lemon juice
Himalayan pink salt, to taste
Yellow tomatoes, halved
Bell peppers, sliced
- To prepare dressing, combine all ingredients in a high-speed blender. Add more or less water depending on your consistency preferences. Store refrigerated for 8-9 days.
- In a bowl or on a plate, assemble all salad ingredients and top with dressing.
