While this green bean casserole might be missing the cream of mushroom soup you’ve come to associate with the classic holiday dish, it’s certainly not lacking in flavor. Fresh garlic, green beans and mushrooms come together to pack a hearty, flavorful punch that’s topped off with an onion-and-almond crunch. This casserole won’t make you feel guilty about having seconds — indulge away!

Ingredients

Extra virgin olive oil
1 garlic clove, diced
Crispy onions and/or slivered almonds, toasted
2 cups green beans
2 cups mixed mushrooms (such as portabella, oyster and crimini)

Directions

  1. Preheat oven to 350 degrees F.
  2. In frying pan, lightly sauté garlic in olive oil. Add mushrooms and cook until just crispy.
  3. In casserole dish, layer green beans and cover with crispy mushrooms.
  4. Bake for approximately 15 minutes. Add crispy onions and/or toasted almonds and bake another 5 to 10 minutes.
