Green Chia Pudding
Serves 1
Ingredients
½ cup chopped spinach
1 Tbsp. chopped mint
1 banana
1 cup coconut cream (skim the top layer from cans of coconut milk)
1 Tbsp. chia seeds
Directions
1. Combine all ingredients in blender; blend smooth.
2. Chill for at least one hour before serving. Store in an airtight container.
