Grillable Foil-Packet Vegetable Medley
In large bowl, combine potatoes, peppers and onion; drizzle with olive oil. Toss with remaining ingredients, coating well.
On four sheets of foil, evenly divide veggies, leaving room around the edges. Bring all foil edges up to meet in the middle and scrunch to form packet.
Grill to desired doneness.
