Grilled Ahi Tuna & Cremini Mushroom Bowl

Make this dish for dinner and share it with a friend – or be shellfish and keep it all for yourself (we won’t judge!). It starts with skewers. Load ‘em up with fresh ahi tuna and mushrooms, then sear on the grill for about a minute. Feel free to nibble straight from the stick, but, to complete this recipe, slide the ‘shrooms and tuna into a rice-and-greens packed bowl. We know you’re going to be hooked!

Grilled Ahi Tuna & Cremini Mushroom Bowl

Instructions

  1. In bowl, stir together rice wine vinegar, coconut aminos, ginger, chili flakes and lime juice. Mix in tuna, cover and refrigerate for at least 30 minutes.
  2. Heat grill to high; spray with cooking oil.
  3. Remove tuna from fridge. Stagger mushrooms and tuna on skewers; season with salt and pepper.
  4. Sear on grill 1 minute per side (or longer, depending how rare you want it). Serve over rice and fresh greens.
