Grilled Ahi Tuna & Cremini Mushroom Bowl

Ingredients
- 1 lb. ahi tuna cut into 1/2-inch chunks
- 8 oz. cremini mushrooms cut in half
- 1/4 cup rice wine vinegar
- 1/4 cup coconut aminos
- 1 Tbsp. finely grated ginger
- 1/2 tsp. chili flakes
- 1/2 lime juiced
- Salt
- Pepper
- 1 cup cooked jasmine rice
- Fresh greens
Instructions

In bowl, stir together rice wine vinegar, coconut aminos, ginger, chili flakes and lime juice. Mix in tuna, cover and refrigerate for at least 30 minutes.

Heat grill to high; spray with cooking oil.

Remove tuna from fridge. Stagger mushrooms and tuna on skewers; season with salt and pepper.

Sear on grill 1 minute per side (or longer, depending how rare you want it). Serve over rice and fresh greens.
