Grilled Watermelon & Goat Cheese Bites

Ingredients

  • 1 watermelon cut into 2-inch round slices
  • 8 oz. goat cheese
  • 1/4 cup cream cheese room temperature
  • 1 tsp. lemon juice
  • Fresh basil leaves
  • Sea salt
  • Chopped nuts such as honey-roasted almonds

Instructions

  1. Preheat grill to 450-500 degrees F.
  2. In large mixing bowl combine goat cheese, cream cheese and lemon juice. Use hand mixer to whip together.
  3. Arrange watermelon on grill grates. Sear about 30-45 seconds per side. Remove from grill and let cool.
  4. Cut watermelon into 2-inch squares. Top with dollop of whipped cheese mixture. Arrange basil and nuts on cheese. Finish with sprinkle of salt.
