Grilled Watermelon & Goat Cheese Bites

Ingredients
- 1 watermelon cut into 2-inch round slices
- 8 oz. goat cheese
- 1/4 cup cream cheese room temperature
- 1 tsp. lemon juice
- Fresh basil leaves
- Sea salt
- Chopped nuts such as honey-roasted almonds

Preheat grill to 450-500 degrees F.

In large mixing bowl combine goat cheese, cream cheese and lemon juice. Use hand mixer to whip together.

Arrange watermelon on grill grates. Sear about 30-45 seconds per side. Remove from grill and let cool.

Cut watermelon into 2-inch squares. Top with dollop of whipped cheese mixture. Arrange basil and nuts on cheese. Finish with sprinkle of salt.
