Make sweet summer memories with this relaxed yet sophisticated appetizer. First, you’ll briefly grill watermelon to coax out depths of flavor and texture. Then dollop on a whipped goat cheese blend for creamy counterpoint and top with basil and chopped nuts. This surprising appetizer is so easy to make that you really can’t not give it a go in your own backyard. Mingle sweet with savory and light with rich for a scrumptious summer treat. Grilled Watermelon & Goat Cheese With Basil & Nuts on Serving Plate

Grilled Watermelon & Goat Cheese Bites

  • 1 watermelon (cut into 2-inch round slices)
  • 8 oz. goat cheese
  • 1/4 cup cream cheese (room temperature)
  • 1 tsp. lemon juice
  • Fresh basil leaves
  • Sea salt
  • Chopped nuts (such as honey-roasted almonds)
  1. Preheat grill to 450-500 degrees F.
  2. In large mixing bowl combine goat cheese, cream cheese and lemon juice. Use hand mixer to whip together.
  3. Arrange watermelon on grill grates. Sear about 30-45 seconds per side. Remove from grill and let cool.
  4. Cut watermelon into 2-inch squares. Top with dollop of whipped cheese mixture. Arrange basil and nuts on cheese. Finish with sprinkle of salt.
