Grilled Watermelon & Goat Cheese Bites
Make sweet summer memories with this relaxed yet sophisticated appetizer. First, you’ll briefly grill watermelon to coax out depths of flavor and texture. Then dollop on a whipped goat cheese blend for creamy counterpoint and top with basil and chopped nuts. This surprising appetizer is so easy to make that you really can’t
not give it a go in your own backyard. Mingle sweet with savory and light with rich for a scrumptious summer treat.
Grilled Watermelon & Goat Cheese Bites
- 1 watermelon (cut into 2-inch round slices)
- 8 oz. goat cheese
- 1/4 cup cream cheese (room temperature)
- 1 tsp. lemon juice
- Fresh basil leaves
- Sea salt
- Chopped nuts (such as honey-roasted almonds)
- Preheat grill to 450-500 degrees F.
- In large mixing bowl combine goat cheese, cream cheese and lemon juice. Use hand mixer to whip together.
- Arrange watermelon on grill grates. Sear about 30-45 seconds per side. Remove from grill and let cool.
- Cut watermelon into 2-inch squares. Top with dollop of whipped cheese mixture. Arrange basil and nuts on cheese. Finish with sprinkle of salt.
