Fruity Broccoli Salad
Ingredients
2 crowns fresh broccoli
½ sweet onion, chopped
1 bag shredded carrots
1 red apple, diced
3/4 cup dried cranberries
½ – ¾ cup slivered almonds
½ tsp. coconut sugar
10 oz. plain, non-fat Greek yogurt
Pinch of ground ginger to taste
Pinch of black pepper to taste
Juice of 1 lemon
Directions: In a large bowl, combine all ingredients and stir until well combined. Pack in an air-tight container and keep refrigerated up to one week.
