Head for the hills! Just don’t forget to pack some snacks to keep you fueled for the trails. Making your ascent is not only treacherous but tiring, which means a pack of pretzels and a box of raisins aren’t going to cut it. What you need is a trail-blazing broccoli salad that’s as fresh as the scenery you’re Snapchatting and as fulfilling as the hike itself. To keep that trail-mix feel, you’ll add diced apple and slivered almonds. A squeeze of lemon juice will keep everything crisp as you crunch, munch and keep climbing.

Fruity Broccoli Salad

Ingredients

2 crowns fresh broccoli
½ sweet onion, chopped
1 bag shredded carrots
1 red apple, diced
3/4 cup dried cranberries
½ – ¾ cup slivered almonds
½ tsp. coconut sugar
10 oz. plain, non-fat Greek yogurt
Pinch of ground ginger to taste
Pinch of black pepper to taste
Juice of 1 lemon

Directions: In a large bowl, combine all ingredients and stir until well combined. Pack in an air-tight container and keep refrigerated up to one week.
