These festive Halloween treats are surprisingly easy to make. Filled with orange-infused, vegan-friendly chocolate pudding and topped with crunchy cacao nibs, your kids (and you!) will love digging into these.

Chocolate-Orange Pudding Jack-o’-Lantern Cups

Instructions

  1. To create jack-o’-lanterns, carefully use paring knife to carve faces into orange peel. Avoid cutting too deep; white pith should remain.
  2. In microwave-safe bowl, melt chocolate chips in microwave for around 60 seconds. Use small spoon or toothpick to fill jack-o’-lantern cutouts with chocolate.
  3. Slice off orange tops and use spoon to scoop out flesh to hollow orange. Reserve orange pieces to use for pudding. Note: The oranges don’t have to be completely empty. Just leave enough space for pudding.
  4. To make pudding, juice reserved orange pieces to make 1/2 cup juice. In bullet blender, combine all pudding ingredients (including orange juice) and blend to form smooth and even consistency.
  5. Spoon pudding into each jack-o’-lantern and top with cacao nibs. Refrigerate 4 hours or more before serving.
