You know those little pudding cups Mom packed in your lunchbox when you were a kid? This chocolate pudding recipe is so much better. Why? For starters, it’s dairy-free, so you don’t have to deal with the digestive discomfort that often comes about when you consume milk and dairy products. Plus, it’s loaded with protein thanks to chocolate protein powder and quinoa. In the end, you get a healthy, protein-packed treat that’s more suitable for your grownup needs.
Makes 2 cups

Ingredients
2/3 cup Bob’s Red Mill Chocolate Protein Powder Nutritional Booster
1/2 cup Bob’s Red Mill Red Quinoa
3/4 cup non-dairy chocolate milk
1 cup water
24 drops chocolate stevia, optional
Directions
- In pot, bring water to boil. Add quinoa and simmer covered for 10-12 minutes or until all liquid is absorbed. Remove from heat and fluff quinoa with fork. Cover and set aside for 15 minutes.
- In food processor, combine cooled quinoa, chocolate protein, milk and stevia (if using). Puree until smooth.
Tip: Prefer vanilla? Feel free to make this with vanilla protein powder and milk, but use regular quinoa so the color doesn’t change.
