Hummus Mashed Potatoes

It not only adds unique flavor but gives everyone’s favorite creamy potato side dish an added protein boost. Use pre-made store-bought hummus to save time!

Hummus Mashed Potatoes

Ingredients

3 lbs. Yukon gold potatoes, peeled and cut into 1/2 inch chunks
3 Tbsp. olive oil
2 cups store-bought hummus
1/2 tsp. salt
1/4 tsp. fresh black pepper
1/4 cup fresh parsley
1/4 tsp. fresh lemon zest

Directions

1. Cook potatoes in a large stockpot filled with water; bring to a boil, reduce heat and simmer for 30 minutes or until potatoes are tender.

2. Drain water, then return potatoes to the pot; mash and add remaining ingredients. Mix well to combine.3. Remove from heat; transfer to a large serving bowl.

4. Serve warm.
