Hummus Mashed Potatoes

Using real butter in homemade mashed potatoes will set you back 11 grams of fat and 100 calories for every tablespoon mixed in! Instead, spruce up your spuds with a scoop of hummus. It not only adds unique flavor but gives everyone’s favorite creamy potato side dish an added protein boost. Use pre-made store-bought hummus to save time!

Hummus Mashed Potatoes


3 lbs. Yukon gold potatoes, peeled and cut into 1/2 inch chunks
3 Tbsp. olive oil
2 cups store-bought hummus
1/2 tsp. salt
1/4 tsp. fresh black pepper
1/4 cup fresh parsley
1/4 tsp. fresh lemon zest


1. Cook potatoes in a large stockpot filled with water; bring to a boil, reduce heat and simmer for 30 minutes or until potatoes are tender.

2. Drain water, then return potatoes to the pot; mash and add remaining ingredients. Mix well to combine.3. Remove from heat; transfer to a large serving bowl.

4. Serve warm.
