					Ingredients
- 1 cup red lentils rinsed
 - 1/2 cup quinoa rinsed
 - 1 medium onion diced
 - 2 carrots chopped
 - 2 celery stalks chopped
 - 3 garlic cloves minced
 - 1- in. fresh ginger grated
 - 1 tsp. turmeric powder
 - 1 tsp cumin
 - 1/2 tsp. smoked paprika
 - 6 cups vegetable broth
 - 1 cup coconut milk optional
 - 1 lemon juiced
 - Fresh cilantro and lemon slice for garnish
 
Instructions
- 
										In large skillet, sauté onion, carrot and celery in olive oil until softened.
 - 
										Add garlic, ginger, turmeric, cumin and paprika. Stir until fragrant.
 - 
										Stir in lentils, quinoa and veggie broth. Bring to boil.
 - 
										Lower heat and simmer 25–30 min until lentils are soft and quinoa is fluffy.
 - 
										Stir in coconut milk (if using) and lemon juice.
 - 
										Garnish with cilantro and enjoy.
