I-rish I may, I-rish I might, have these crispy potatoes every night. Please excuse our cheesiness, but we’re just completely gaga over these Irish cheddar potato pancakes. Served with a side of homemade chipotle yogurt dipping sauce, you can consider this dish your lucky meal. Plus, it’s lightly seared using avocado oil, which is rich in omega-3 polyunsaturated fats and antioxidants such as vitamin E and lutein. Perfect for St. Patrick’s Day, enjoy these savory pancakes for breakfast, lunch or dinner.

Irish Potato Pancakes with Chipotle Yogurt Sauce

  • 1/2 cup plain Greek yogurt
  • 1 chipotle pepper
  • 1 Tbsp. low-fat cream cheese
  • 1/2 tsp. salt
  • 1/2 lime, juiced


  1. In food processor or blender, combine all sauce ingredients until creamy and set aside.
  2. Using hand grater, shred potatoes. Transfer shreds to strainer, pressing down to remove excess water. Transfer to large bowl and add green onions, egg, flour, salt, pepper and cheese. Mix well.
  3. In cast iron skillet over medium heat, add avocado oil. Spoon three large portions of potato mixture into pan; pressing down on each to flatten. Cover with lid and cook 4-5 minutes until golden brown. Flip and cook another 2-3 minutes. Repeat process until mixture is used.
  4. Serve with chipotle yogurt sauce, fresh cilantro and fresh lime juice.
