Irish Potato Pancakes with Chipotle Yogurt Sauce

Ingredients
Pancakes:
- 3 large russet potatoes, peeled
- 4 green onions, chopped
- 1 beaten egg
- 1/2 cup all-purpose flour
- 1/2 cup Irish cheddar cheese
- 1/4 cup cilantro, chopped
- 1 tsp. salt
- 1 tsp. garlic powder
- 1 tsp. pepper
- Vitacost Brand Avocado oil
Sauce:
- 1/2 cup plain Greek yogurt
- 1 chipotle pepper
- 1 Tbsp. low-fat cream cheese
- 1/2 tsp. salt
- 1/2 lime, juiced
Instructions

In food processor or blender, combine all sauce ingredients until creamy and set aside.

Using hand grater, shred potatoes. Transfer shreds to strainer, pressing down to remove excess water. Transfer to large bowl and add green onions, egg, flour, salt, pepper and cheese. Mix well.

In cast iron skillet over medium heat, add avocado oil. Spoon three large portions of potato mixture into pan; pressing down on each to flatten. Cover with lid and cook 4-5 minutes until golden brown. Flip and cook another 2-3 minutes. Repeat process until mixture is used.

Serve with chipotle yogurt sauce, fresh cilantro and fresh lime juice.
