Sautéed radishes offer a mild pepper flavor that pairs well with the fresh hints of lemon juice, Italian herbs and red onion. It’s a quick and easy side dish that’s ready in 15 minutes.

Zesty Radish & Spinach Sauté (Keto & Vegan)

Ingredients

  • 2 Tbsp. avocado oil
  • 1.5 lb. radishes about 3 bunches, save leafy tops for another recipe
  • 1/2 cup red onion diced
  • 1/4 tsp. Himalayan pink salt
  • 1/8 tsp. ground black pepper
  • 6 oz. baby spinach
  • 1/2 lemon juiced
  • 1 Tbsp. flat-leaf Italian parsley chopped for garnish (optional)

Instructions

  1. Use paring knife to trim the stem and root ends from the radishes. Slice into quarters and transfer to medium bowl.
  2. In large skillet, heat oil over medium-high heat. Sauté radishes and onion for 6 minutes, stirring frequently, until tender.
  3. Season with salt and pepper, then stir in spinach. Cook until spinach wilts, about 2 minutes.
  4. Spoon radishes into large serving bowl and stir in lemon juice. Garnish with parsley and serve warm.
