  1. In high-speed blender, add collagen powder, cottage cheese, lemon juice, lemon zest and sweetener. Pulse until smooth and creamy.
  2. Taste for sweetness and adjust as desired.
  3. Break up 2 graham crackers into small chunks and divide between bottom of two parfait glasses or bowls.
  4. Spoon pudding on top of crackers.
  5. Crush remaining crackers and sprinkle on top. Top with lemon zest and raspberries for garnish, if desired.
