Minty Coconut-Chia Pudding

Bought a bag of chia seeds, but not sure how to use them? These protein-packed gems are great sprinkled on salads, cereals and other common foods””but did you know you can bake with them? Stir them into smoothies? Or even add them to pudding? Try this simple recipe and see for yourself!

Minty Chia Pudding
Non-GMO chia seeds give this fun pudding an exciting texture.

Minty Coconut-Chia Pudding

Serves 1

Ingredients

½ cup unsweetened almond milk
1/4 cup coconut cream*
1 Tbsp. chia seeds
1-1/2 tsp. mint flavor (not mint extract)
1 Tbsp. chopped mint leaves

*For coconut “cream,” skim the thick top layer from a can of coconut milk.

 

 

Directions

1. Combine all ingredients in a clean jar. (Tip: I use my old almond butter jars!)

2. Cover and shake.

3. Refrigerate for at least 1 hour.

4. Enjoy!
