No-Bake Nutter Butter Carob Cups

I want candy! Not the kind that comes in a shiny wrapper, jacks up my energy and then leaves me… wanting more candy. Give me chocolaty, chewy, nutty treats that are healthy, too. These nut butter cups are that KIND of awesome—because they’re made with KIND Healthy Grains Whole Grain Clusters. Churned into a cookie-like crust, you get grain greatness from buckwheat, brown rice, amaranth, millet and quinoa, plus loads of peanut butter yum. Sweeten the deal with a drizzle of almond butter and sprinkling of carob chips.

Recipe: No-Bake Nutter Butter Carob Cups

Makes 8

Ingredients

Crust
2 cups KIND Healthy Grains Peanut Butter Whole Grain Clusters
2 Tbsp. coconut oil
1 tsp. maple syrup

Filling
Almond Butter

Topping
Handful carob chips or chocolate chips
Handful Kind PB clusters

Directions:

  1. In a food processor, combine all the crust ingredients.
  2. Spoon a small amount of crust mixture into paper muffin-tin liners; press down.
  3. Drizzle almond butter over crust.
  4. Sprinkle with carob or chocolate chips and PB clusters.
  5. Freeze overnight.
