Quinoa may be small, but it sure is mighty. The little seed packs a nutritional punch, offering loads of protein and fiber, plus tons of vitamins and minerals. Eat up its health benefits first thing in the morning with this overnight quinoa breakfast cereal. Like in overnight oats, the ingredients in this piece-of-cake recipe are combined in a jar and refrigerated overnight. In the morning, you get a nutrient-packed breakfast you can eat on the run!

Ingredients

1/4 cup cooked quinoa
1/4 cup shredded coconut
1/4 shredded carrots or pureed carrots
1 Tbsp. walnuts, chopped
1/3 cup unsweetened vanilla almond milk or coconut milk
2 tsp. chia seeds
1 tsp. cinnamon
1-2 Tbsp. raisins or dates, optional

Directions

  1. In a jar, combine all ingredients. Cover with lid and shake until well combined.
  2. Refrigerate overnight and eat for breakfast.

Mo’s note: Make a big batch to eat throughout the week – these keep well in the fridge for up to 5 days.
