Like in overnight oats, the ingredients in this piece-of-cake recipe are combined in a jar and refrigerated overnight. In the morning, you get a nutrient-packed breakfast you can eat on the run!
Ingredients
1/4 cup cooked quinoa
1/4 cup shredded coconut
1/4 shredded carrots or pureed carrots
1 Tbsp. walnuts, chopped
1/3 cup unsweetened vanilla almond milk or coconut milk
2 tsp. chia seeds
1 tsp. cinnamon
1-2 Tbsp. raisins or dates, optional
Directions
- In a jar, combine all ingredients. Cover with lid and shake until well combined.
- Refrigerate overnight and eat for breakfast.
