Dessert is always sweeter when it’s shared! Not that this pudding is lacking in the delicious department. Made with pure ingredients like raw honey, cacao powder and coconut milk – with a creamy, ripe avocado as the base – this recipe makes just enough for you and your paleo-loving prince, princess or pal. Top with chopped nuts or fresh fruit for a perfect clean-eating Valentine’s Day splurge.

Paleo Cacao-Coconut Pudding for Two

Ingredients

1 ripe avocado
6 Tbsp. coconut milk
2 Tbsp. cacao powder
2 Tbsp. honey
Optional: chopped walnuts, for topping

Directions

  1. Cut open the avocado and remove pit. Cut avocado into large chunks and place in blender.
  2. Add cacao, honey and coconut milk.
  3. Blend mixture, starting on low and then moving to high speed until smooth.
  4. Refrigerate pudding and serve cold. Top with chopped walnuts, if desired.
