You put the lime in the coconut and… mash them together with avocado to make the perfectly harmonious paleo guacamole! While the original recipe is always a hit, there’s no doubt that this simple, six-ingredient rewrite on classic guac will leave your taste buds singing.
Paleo Coconut Guacamole
Ingredients
1 ripe avocado, halved; pit reserved
½ cup extra virgin olive oil
1 lime or Meyer lemon
2 cloves garlic, smashed
Pinch Himalayan sea salt
¼ cup natural, flaked coconut
Directions
- In large bowl, mash together first five ingredients.
- Place avocado pit (for decor) in center of guacamole, then sprinkle on coconut.
- Serve guacamole with your favorite fresh veggies, such as blanched asparagus, broccolini and sliced bell peppers.
