Paleo & Gluten-Free Maple-Bacon Cookies

With the exception of non-meat eaters, most of us can agree that bacon is a welcome addition to nearly any dish. Sandwiches, salads, breakfast — you name it, bacon almost always makes it better. And these paleo cookies with bacon and maple are absolutely no exception. The perfect marriage of salty and sweet, you’ll want these cookies for breakfast and dessert.

Ingredients

1-1/4 cups almond flour
1 Tbsp. coconut flour
2/3 cup maple syrup
5 Tbsp. coconut oil
1-1/2 tsp. baking powder
1 tsp. vanilla extract
1/4 tsp. sea salt
3/4 cup pre-cooked bacon, chopped
1 large egg

Directions

  1. Preheat oven to 325 degrees F and line baking sheet with parchment paper.
  2. In large bowl, combine all ingredients and mix until smooth.
  3. On baking sheet, drop spoonfuls of batter about an inch apart.
  4. Bake 13-15 minutes and let cool before transferring.
