Got matcha on your mind? Don’t limit your intake of this pure, potent green tea to mugs and beverages. There are other ways to enjoy it and reap its benefits, like making these bite-sized, paleo-friendly snack balls. There’s no baking necessary—just mix the ingredients together, scoop, roll and chill! Few other snacks are just as simple (or just as tasty!) as these matcha bliss balls.

Ingredients

1 Tbsp. matcha green tea powder
1/2 cup paleo baking mix
1/3 cup unsweetened coconut milk
1 “chia egg
2 tsp. vanilla
1/2 tsp. ground ginger
Pinch stevia, to taste

Optional toppings

Crushed pistachios
Unsweetened shredded coconut

Directions

  1. In a large mixing bowl, combine all ingredients and mix well.
  2. Scoop out a tablespoon or two at a time and roll into balls. If desired, roll in suggested toppings.
  3. Store in fridge or freezer.
