Ingredients
Orange layer
- 4-5 oranges thinly sliced into rounds
- Coconut oil for greasing pan
Dry ingredients
- 2 cups almond flour
- 1/4 cup coconut flour
- 3/4 tsp. baking soda
- 1 tsp. cinnamon
- 1/2 tsp. ground ginger
- 1/2 tsp. ground cloves
- 3 pinches pure monk fruit extract
- 1/2 tsp. pink salt
- 1 tsp. orange zest
Wet ingredients
- 4 organic free-range eggs
- 1/4 cup fresh-squeezed orange juice
- 1 tsp. apple cider vinegar
- 3 Tbsp. liquefied coconut oil
Instructions

Preheat oven 350 degrees F. Grease 6-in. pan with coconut oil. Arrange orange rounds to cover the entire bottom of the pan in a flat layer. Tip: Pull apart one ring to fill in any empty spaces with smaller wedges. Reserve any unused orange pieces for cake batter.

To make cake batter, in large bowl combine all dry ingredients and mix well until thoroughly combined. Add wet ingredients and mix well until completely incorporated.

Pour batter over orange slices. It will be a little thick, so use a spatula to press it down and make sure it reaches the edges of the pan.

Bake 30-32 minutes, until toothpick comes out clean. Let cool before removing from pan. Flip it over directly onto serving tray.
