It’s summertime, and the grilling is easy—at least it is if you’re following a Paleo diet. From grass-fed burgers to thick-cut salmon steaks, your main course is easily covered. But what’s on the menu for sides, when the most popular barbecue picks are typically off limits? At your next cookout, give grilled romaine hearts a try. Coated with a zesty lemon dressing and served with sprinkles of bacon, this salad certainly deserves a spot on your plate.
Paleo Summer Recipe: Grilled Romaine Salad
Ingredients
3 hearts of romaine, cut in half, lengthwise
4 pieces bacon, cooked and chopped
2/3 cup lemon juice
1/2 cup walnuts
1/4 cup olive oil
2 Tbsp. flax meal
2 tsp. garlic powder
1 Tbsp. water
1-1/2 tsp. dijon mustard
1/4 tsp. sea salt
Directions
- Soak walnuts in water for 10 minutes, then drain.
- In food processor, combine lemon juice, walnuts, olive oil, flax seeds, garlic, water, mustard and sea salt; blend until smooth.
- Heat grill to high. Once hot, brush insides of romaine with dressing, then place dressed side down for 2-3 minutes. While cooking, brush additional dressing on top and cook for another minute or two.
- Top each grilled romaine heart with crumbled bacon and serve.
