Pasta Salad with Artichokes & Olives

There’s nothing Greek about pasta salad. Anyone can toss together this basic side dish, which is great news when you get a last-minute invite to dinner at your boss’s house (eek!). You have enough to worry about — like how not to embarrass yourself — so you need a recipe that will effortlessly deliver on the three Ps: palate, presentation and perfectly safe for all dieters. This Mediterranean-inspired recipe, made with gluten-free penne, could be your ticket to the window office.

Pasta Salad with Olives & Artichoke Recipe

Pasta Salad with Artichokes & Olives

Serves 8

Ingredients

8 oz. gluten-free penne pasta
1 cup artichoke hearts in olive oil
½ cup pitted Kalamata olives
2 cups heirloom tomatoes, chopped
2 cups cucumber, peeled and chopped
¼ cup freshly squeezed lemon juice
¼ tsp. sea salt
¼ tsp. black pepper

Directions

  1. Cook pasta according to package directions. Drain, rinse and set aside.
  2. In a large bowl, toss pasta with remaining ingredients.
  3. Chill pasta salad in the refrigerator for about an hour before serving.
