Peanut Butter Surprise Chocolate Cupcakes
Ingredients
2 cups oat flour
2/3 cup unsweetened cocoa powder
½ cup coconut sugar
½ cup almond milk
2 Tbsp. melted coconut oil
1 tsp. baking powder
4 eggs
½ cup creamy peanut butter
Directions
- Preheat 350 degrees F and prepare a muffin pan with paper liners or coat with non-stick cooking spray.
- In a large bowl, stir together all ingredients – except peanut butter – until well combined.
- Pour a small amount of batter into prepared muffin pan, top with about a tablespoon of peanut butter and cover with more batter. Repeat until all batter is used up.
- Bake 20 minutes, or until the edges begin to crisp.
