Peanut Butter Surprise Chocolate Cupcakes

A cupcake with no frosting is more like a sugared-up muffin. A cupcake with a cream filling, however, is true to its core. Let the smooth peanut butter center of these chocolate pastry treats prove that frosting doesn’t have to sit on top. Besides, stuffing it inside makes for one sweet surprise!

2 cups oat flour
2/3 cup unsweetened cocoa powder
½ cup coconut sugar
½ cup almond milk
2 Tbsp. melted coconut oil
1 tsp. baking powder
4 eggs
½ cup creamy peanut butter


  1. Preheat 350 degrees F and prepare a muffin pan with paper liners or coat with non-stick cooking spray.
  2. In a large bowl, stir together all ingredients – except peanut butter – until well combined.
  3. Pour a small amount of batter into prepared muffin pan, top with about a tablespoon of peanut butter and cover with more batter. Repeat until all batter is used up.
  4. Bake 20 minutes, or until the edges begin to crisp.
