Ingredients
- 1-1/4 cups peanut butter salted & unsweetened
- 1 cup butter or plant-based butter, softened to room temperature
- 1 Tbsp. vanilla extract
- 1-1/4 cups peanut butter powder
- 1/3 cup powdered monk fruit
Coating
- 1-3/4 cups chocolate chips
- 1 Tbsp. coconut oil
Optional
- Peanuts crushed
Instructions

Oil large baking sheet or line with parchment paper. Set aside.

With hand mixer or stand mixer fitted with a paddle attachment, beat butter, peanut butter and vanilla until smooth, about 2 minutes. Slowly add powdered peanut butter and monk fruit and beat on low until everything is combined into creamy consistency, about 2 minutes.

Roll dough into 1-inch balls and arrange on baking sheet. Refrigerate at least 1 hour.

After chilling time, using saucepan, melt together chocolate and coconut oil.

Using toothpick, dip each ball in melted chocolate mixture. If desired, lightly sprinkle each ball with crushed peanuts while chocolate is still wet. Set each coated truffle on baking sheet and refrigerate 30 minutes or until chocolate has set.

Store in refrigerator up to 2 weeks.
