Grilled Portobello Mushroom Burgers

Ingredients
- 4 large portobello mushrooms
- 1 large red onion cut in rings
- 2 cups arugula
- 1 big red tomato cut in 4 thick slices
- 1 avocado sliced
- 3 Tbsp. coconut aminos
- 1 Tbsp. olive oil for marinade
- 1 Tbsp. olive oil for the onion rings
- 1/2 tsp. Himalayan pink salt
- 1/4 tsp. black pepper
- 4 hamburger buns
Instructions

In small bowl, whisk together coconut aminos, olive oil, salt and pepper for marinade.

Brush portobellos with marinade and let sit at room temperature 20-30 minutes.

Preheat outdoor grill at medium to high heat.

Brush onion rings with oil and sprinkle with salt.

Grill onion rings in single layer, flipping when grill marks form. Set aside.

Grill portobellos stem side up 5 minutes or until grill marks appear. Flip and cook another 4-5 minutes.

Grill buns 1 minute if desired.

To prepare burgers, top buns with arugula, tomato slice, grilled onion, grilled portobello and avocado slices.
