Power Trip Polenta

Remember Flo from the TV show “Alice?” She was (in)famous for the line, “Kiss my grits.” Well, you will want to kiss these grits, and after you eat ’em, you’ll feel an extra burst of energy and spunk just like Flo, thanks to the added raw protein powder and rice milk.

Ingredients

1 cup  organic corn grits (polenta)
1 to 2 scoops  raw protein powder
3 cups  whole grain rice milk
Raw coconut crystals
1/2 tsp.  Himalayan fine salt crystals

Directions

In a large saucepan, bring rice milk and salt to a boil. (Note: Be sure to add the salt while the milk is still cold.) Stir in corn grits. Reduce heat and simmer, stirring occasionally for about 20 minutes, or until slightly thin (cereal will thicken substantially later). Turn off heat and stir in protein powder. Add coconut crystals to taste. Cover and let stand for a few minutes before serving.
