Is there anything better than pumpkin desserts? Actually, there is: desserts made with pumpkin and chocolate! These pumpkin brownies, made with paleo, gluten-free and vegan ingredients, are rich, sweet, irresistibly delicious—and they’re good for you! That means, of course, that you get to have seconds (or thirds, we won’t judge) without guilt! Dig in!

Ingredients

1 cup pumpkin puree
2 chia “eggs”
1/3 cup extra virgin coconut oil
2 tsp. vanilla
1-1/2 cups paleo baking flour
1 cup unsweetened cocoa powder
1 1/2 tsp. cinnamon
1/3 cup mini dark chocolate chips, optional
1 tsp. pure liquid stevia, optional

Directions

  1. Preheat oven to 325 degrees F. Lightly grease a square glass pan.
  2. In a large bowl, combine wet ingredients and slowly mix in dry ingredients until well blended.
  3. Pour mixture into prepared pan and spread the top evenly.
  4. Bake approximately 20 minutes or until a toothpick inserted into the center comes out clean.
