This pudding recipe combines both favorites to create a delicious treat, perfect for all your vegan snacking needs.
2 scoops pumpkin seed protein powder
1/2 cup unsweetened vanilla coconut milk
1/4 cup pumpkin seed butter
1/4 cup mashed sweet potato
2 Tbsp. chia seeds
2-3 tsp. cinnamon
Directions
- In a high-speed blender, combine all ingredients and process until smooth.
- Transfer to a jar with an airtight lid and refrigerate for about 2 hours until a gelled, pudding-like consistency is reached.
