Raw Cinnamon Buns with Cashew-Coconut Icing

Fresh-from-the-oven, sweet cinnamon roll flavor is wrapped up in these little buns, drizzled with a gooey icing made without the artificial yum-inducers found in the mall food-court kind. Just whiz together the ingredients in your food processor and assemble—raw and vegan…it’s how we roll!

No-Bake Cinnamon Buns

 

Raw & Vegan Cinnamon Buns

Dough

1-1/2 cups dates
2 Tbsp. cinnamon
1/4 cup coconut oil
2 cups rolled oats
1/3 cup pecans
1/4 cup + 2 Tbsp. water

Filling

1/2 cup dates
1 Tbsp cinnamon
2 Tbsp agave nectar
2 Tbsp coconut oil

Icing

1/4 cup cashew butter
1/4 cup coconut oil
1 tsp. vanilla extract
2 Tbsp. agave nectar

Directions

  1. Combine all dough ingredients in food processor; blend and set aside.
  2. Combine all filling ingredients in food processor; blend and set aside.
  3. Combine all Icing Ingredients in food processor, blend and set aside.
  4. Roll dough out into a rectangle shape.
  5. Spread filling over the dough.
  6. Roll dough into a cylinder and cut into cinnamon buns.
  7. Top buns with Icing and pecan chunks.
