Raw-Vegan Cacao-Peppermint Patties
Ingredients
Chocolate Coating
1/2 cup raw cacao butter
1/2 cup coconut oil
1 cup raw cacao powder
2-4 tablespoons agave nectar
1/2 teaspoon peppermint extract
Mint Filling
1 cup shredded coconut
2 tablespoons agave nectar
1 teaspoon peppermint extract.
Directions
1. Add coconut to food processor; process until powdered.
2. Add agave and peppermint. Pulse to combine.
3. Chill in refrigerator and let ingredients set.
4. Roll mint filling into balls and flatten.
5. In small bowl, whisk together all chocolate coating ingredients; let the mixture sit until thickened.
6. Dip mint patties into chocolate coating. Place in freezer to harden.
