Roasted Chipotle Sweet Potatoes
Serves 4
Ingredients
3 to 4 medium sized sweet potatoes, cut into wedges
3 to 4 tsp. ground chipotle pepper, to taste
Coconut oil spray or non-stick coking spray of choice
Juice of 1 lime
2 Tbsp. fresh parsley, chopped
Directions
1. Preheat oven to 350 degrees F. Lightly spray baking sheet with coconut oil spray.
2. In a large bowl, toss sweet potato wedges with remaining ingredients, making sure to evenly season.
3. Place wedges on baking sheet and bake for 20 minutes or until desired crispiness.
