Ingredients
- 6-7 cups sliced Gala, Granny Smith & Honeycrisp apples about 2 of each type
- 3 Tbsp. pure maple syrup
- 1/2 cup coconut milk or cream
- 1 tsp. ground cinnamon
- 1/2 tsp. ground nutmeg
- 1/4 tsp. ground ginger
- 1/8 tsp. allspice
Topping:
- 1/3 cup gluten-free all-purpose flour
- 1/2 cup pecans roughly chopped
- 1/2 cup gluten-free rolled oats
- 1/4 cup organic brown sugar
- 3-4 Tbsp. vegan butter melted
- 1-1/2 tsp. ground cinnamon
- 1/2 tsp. ground nutmeg
- 1/4 tsp. ground ginger
Instructions

Preheat oven to 375 degrees F. Line large baking sheet with parchment paper; set aside.

In large bowl, mix together coconut cream, maple syrup and spices. Toss in sliced apples, coating generously.

In separate bowl, combine flour, pecans, brown sugar, oats, vegan butter and topping spices. Stir together until mixture looks crumbly and slightly chunky.

Spoon apples onto baking sheet. Top with topping mixture. Bake 40 to 45 minutes or until apples become bubbly and topping is golden brown.
