Slow Cooker Blueberry Oatmeal

Stop refrigerating overnight oats. The cold clump of grains is far from inviting. Not to mention, there’s barely a trace of flavor left in the jar come morning. A slow cooker can fix all that. These overnight steel cut oats stew on low while you snooze the night away. For a refreshing change, you’ll wake to a bowl of steamy oatmeal that offers a sweet-salty sensation with every spoonful.

Serves 1

Ingredients

1-1/2 cups steel-cut oats
4 cups milk
1 cup blueberries
1-1/2 Tbsp. Gustus Vitae Crystallized Honey Sea Salt
1 tsp. vanilla extract

Directions

  1. Lightly coat a slower cooker with nonstick cooking spray or 1 teaspoon of butter.
    Pour in oats, making sure to distribute evenly.
  2. In a small bowl, stir together 3/4 cup blueberries, honey sea salt and vanilla. Pour milk mixture over oats.
  3. Set slow cooker to low and let cook 7-8 hours, or overnight.
  4. Before serving, stir to blend in berries. Add more milk, if needed, and top with 1/4 cup berries.
