Spinach & Strawberry Chicken with Balsamic Glaze

Chicken is a protein powerhouse (a half-breast hauls in 27 grams!) that probably makes an appearance on your dinner menu at least two or three times a week, maybe more. Baked with lemon juice, chopped and sprinkled over salad—your usual prep methods get dinner on the plate, but your palate is pleading for more. Think outside ordinary marinades and cooking methods with this refreshing fruit-topped dish. Fresh spinach and basil add extra nutrition, while a drizzle of dark balsamic vinegar gives every bite the excitement your taste buds crave.

Spinach & Strawberry Chicken with Balsamic Glaze

Serves 6

Ingredients

Balsamic vinegar, for drizzling
¼ cup fresh basil
½ cup spinach, chopped
15-20 strawberries, hulled
1 shallot, diced
3-4 lbs. chicken breasts, boneless/skinless, halved (long way)
Non-stick cooking spray

Directions

  1. Preheat oven to 400 degrees F. Spray 9×13 baking dish with non-stick spray.
  2. Arrange chicken breasts in baking dish. Top with strawberries, spinach, shallots and basil. Drizzle with balsamic vinegar.
  3. Bake chicken for 30 minutes or until cooked through.
