Spinach & Strawberry Chicken with Balsamic Glaze

Ingredients
Balsamic vinegar, for drizzling
¼ cup fresh basil
½ cup spinach, chopped
15-20 strawberries, hulled
1 shallot, diced
3-4 lbs. chicken breasts, boneless/skinless, halved (long way)
Non-stick cooking spray
Directions
- Preheat oven to 400 degrees F. Spray 9×13 baking dish with non-stick spray.
- Arrange chicken breasts in baking dish. Top with strawberries, spinach, shallots and basil. Drizzle with balsamic vinegar.
- Bake chicken for 30 minutes or until cooked through.
