Stovetop Oatmeal With Apples and Peanut Butter

Ingredients
- 2 medium apples peeled, cored and diced
- 1 cup water
- 2 cups whole milk
- 1/4 tsp. kosher salt
- 2 cups old-fashioned rolled oats
- 1/4 cup creamy natural peanut butter
- 1/4 cup maple syrup
- 1/4 tsp. pure vanilla extract
- 1/2 tsp. ground cinnamon
Instructions

In medium saucepan over medium heat, cook apples with few splashes of water until softened, stirring regularly. You can keep them fairly firm or cook them for up to 30 minutes for a smoother apple sauce.

Meanwhile, bring cup of water, milk and salt to boil in separate medium saucepan. Stir in oats and reduce heat to simmer. Stir in peanut butter, maple syrup, vanilla and cinnamon until mixture is uniform and creamy, 3 to 4 minutes.

Remove from heat and serve with apple compote on top, plus any additional toppings you like.
