Put the two together for a satisfying meal that hits the spot on hot days! This picnic-worthy dish combines sweet, ripe strawberries with crisp cucumber chunks, topped with a light coconut dressing infused with mint. For extra protein, omegas and a touch of elegance, toss a tablespoon of white chia seeds into the mix!

Berry Cucumber Salad With Coconut-Mint Dressing

Makes 8 servings


4 cups organic strawberries, washed and cubed
4 cups cucumbers, washed, peeled and cubed

1 cup coconut milk
2 Tbsp. fresh mint leaves, washed and finely chopped
Pinch salt
1 Tbsp. white chia seeds
½ tsp. organic grade-B maple syrup


  1. Whisk together dressing ingredients and set aside. Adjust sweetness to taste, as needed.
  2. Place strawberries and cucumbers in serving bowl.
  3. Pour dressing over salad and toss to evenly distribute dressing.
  4. Chill 30 minutes before serving.
