Fudgy Sweet Potato Brownies

Here’s another smart alternative: using steamed sweet potato when you want to cut down on added sugar. The vitamin-A-rich veggie naturally sweetens this batch of brownies and even lends a fudge-like consistency without eggs, gluten or milk. The alternative has officially become first pick.

Ingredients

2 medium sweet potatoes
1/2 cup maple syrup
12 dates, pitted
2 scoops Designer Whey Native Whey Isolate Chocolate Milkshake
3/4 cup flour
1/4 cup cocoa powder
1/4 tsp. salt

Directions

  1. Preheat oven to 400 degrees F and line a 9-inch round baking dish with parchment paper. Set aside.
  2. Roughly chop sweet potatoes. Place potato pieces in a pot with 1-2 inches of water over medium heat. Steam until soft and sappy, about 15 minutes. Drain water.
  3. In a food processor, add sweet potatoes, maple syrup and dates. Process until smooth.
  4. Add remaining ingredients and mix to combine.
  5. Pour mixture into prepared baking dish. Bake 20 minutes, or until a toothpick inserted in the center comes out clean.
