Ingredients
1 large sweet potato
1 large egg white (beaten lightly)
½ tsp. vanilla extract
¼ tsp. cinnamon
¼ tsp. low-calorie sweetener
Directions
1. Preheat oven to 425 degrees F.
2. Cut sweet potato into even slices. Place slices into a container or re-sealable bag, add remaining ingredients and shake to coat.
